What I ate Wednesday

It's Wednesday already??

Wow this week is going fast!

Sunday was Father's Day and, even though we don't have any children, I couldn't ask for a better pet papa than J for my babies!

The pups and kitties gave their "dad" a card and gift card to "Roosters". 

We stopped there over the weekend after watching "Super 8" (great movie BTW!)

They had an awesome drink called "Country Tea" which was:

Firefly sweet tea, sour, and pink lemonade and of course some type of alcohol. (I forget what, so sorry!).

OHHH EMMM GEEEE! This is my new favorite drink! I actually had two, which is really rare for me. I usually limited myself to one fruity drink, but I just couldn't help myself this time!

On to the eats!

We welcomed summer yesterday with fish tacos and fresh Mango Salsa!

And since it doesn't feel quite right to end a post without some type of dog pic (I am that crazy dog mama!) ,  here is a pic of Sammy and Daisy dreaming about what they want to eat...

They are looking in the back room of the basement where the cat food and the *cough,cough* litter box is. (Yes,my dogs are gross and enjoy kitty crispies) Don't worry, there is a gate up and they can't get to it!

Welcome Summer!

Yesterday was the first day of summer! Yay! I'm super excited about it!

I celebrated with a 6 a.m. spin class. This was my first spin class ever.
All I can say is, I loved it! It was a lot of fun and I feel like I got a great workout.
 I am not usually a morning person, but I liked the fact that I was done working out at 6:45 in the morning.  (even if I did come back home and sleep until 9..shhhh)
I figured that since it was the first day of Summer, we should have something light and summery for dinner. I decided to make fish tacos with mango salsa. That just says summer to me! This was my first time making mango salsa. I found a basic recipe online and added to it and changed it around a bit. The great thing is that mangos are in season right now and were only $1 each!

Mango Salsa
  • 2 Mangos pitted and chopped
  • 1 small cucumber chopped
  • 1/2 small red onion
  • 1 small avocado
  • chopped jalapeno (add as much or little as you want to make it hotter)
  • fresh cilantro
  • fresh lime juice ( I used 2 small limes, but 1 large one would work too!)
  • salt and pepper to taste.
Mix everything together and chill for a bit.

While making dinner, we sipped on some wine from a local winery.

This particular bottle of  wine may have been a bit too sweet for this meal, but that didn't bother us one bit!
We usually use talapia to make fish tacos and we didn't have any,
but we did happen to have frozen Walleye from Lake Erie.
J squeezed some lemon juice over the top and seasoned with salt and pepper.

Baked at 400 for 15 mins. 

Loaded up a tortilla with fish, shredded cabbage and top with salsa.

We added some green beans on the side and ate outside on the deck.
It was the perfect way to welcome Summer!

Everything is going to be Amazing!

The other day I went to Kohl's because I had some Kohl's cash that I wanted to spend. Also, I had to return some shorts I bought for J because the size on the hanger didn't match the actual size of the pants. Ooops! Guess that will teach me to not double check!

I browsed the T-shirt section and found one for J, but they didn't have his size.

love it!

Anyhoo, once I found a pair of correct size shorts and double checked the size, I headed over to the home section. I know I can't be the only one who is super excited that there is always most things something on sale at Kohl's! I stopped and swooned over this...

It was on sale, but still just a bit more than I want to spend on something like that right now.
Maybe someday...

Even though I didn't get the Margarita maker I still found plenty of great deals!

Here are a few things I bought:

When I went to check out, the cashier asked me if I had any additional coupons. I sadly said I didn't. Then, the nice cashier took out a deck of coupons and told me to pick one. They were scratch off coupons! I saved an additional 15%. Go go go! It's more of that coupon karma!

All and all, I was pretty happy with my shopping trip. I bought J a few shirts, a pair of shorts, all the above pictured things and my total was $60 after my surprise 15 % off and my Kohl's cash.

Not too shabby considering the Lucky picture was $39.99 retail and the candle was $29.99 retail. I know, who would pay $30 for a candle? Thank goodness it was at Kohl's and it, and the picture, were 40% off!  I have been looking for a candle just like that for a special home decor project.

I am also considering starting out on a new venture. I am so nervous, but I think it's time I start following my dreams! :-)

Heartless Watermelon

I took these guys on a 2.5 mile walk today.

I had a handful of these right before we left since it was close to lunch time.

Hi Sam!
It was nice to get outside and enjoy this beautiful day.
When we got back home, I made a simple lunch of a bagel thin, turkey, tomato and hummus with watermelon and pineapple on the side.

I love watermelon! My favorite part is the extra sugary sweet part in the middle called the heart. 
I usually eat this first.

 However, when I cut open this particular watermelon, there wasn't a heart. It was the same all the way through. Sad face.

After pouting, I cut it up and even shared some with the dogs.
Overall, it's a good watermelon, just heartless.

Here are some watermelon facts!

  • Watermelon is actually a vegetable and not a fruit. It is also related to the pumpkin, cucumber and the squash. (oops! I thought it was a fruit!)
  • Watermelon consists of 92% water and 8% sugar.
  • Bill Carson of Arrington, Tennessee grew a 262 pound watermelon in 1990. This feat found a place in the 1998 edition of the Guinness World Book of Records.
  • Watermelon became a part of the dictionary in 1615. 

  • 1 Cup of cubed watermelon has approx 46 calories.

I had no idea it was a vegetable. It will always be a fruit to me!

How Our Garden Grows

Even though it's we got off to a bit of a late start, we finally have our flower beds and garden going in for this year!

They empty boxes were making me sad.

Over the weekend I was able to plant some of the many flowers we bought.
I filled the two main flower pots out front with:

 Sweet Potato Vine- Love these! So pretty!
Petunias-gorgeous purples!
Purslane - cute little flowers

These all need full sun, which is what the front of our house gets, so they should thrive!

I know they don't look like much now, but they will fill in beautifully in the upcoming weeks. (I hope!).

Rusty seems to like them!

We are also putting in a vegetable garden this year! I am super excited because I loved having one when I was growing up!

J and I have tried over the last few years to have a garden and it really hasn't worked out.
First year, nothing grew. Second year, the deer ate what grew.
This year, we have a plan!

First, we decided that our soil isn't good for a garden, so we brought in a truckload of topsoil mixed with compost and laid it out.

Next came to "organic layer". And by "organic" I mean manure.
 J's parents own a farm and we loaded up the truck there.
You really can't get much more organic than that!

It was kinda gross shoveling manure out onto my yard,
but I got over it and we even had a manure fight.
Ya, we are cool like that!

Daisy was intrigued...

And then she was a little nervous...

"Save me, Dad!!"
I am so excited to see how this garden turns out!

Now, I've got to run, literally. I am planning on running the Akron 1/2 marathon again this year so I have got to start training!
